The old PS1 game "Guardian's crusade" has no random encounters , you can actually see the monsters roaming on the screen. The Lunar series is similiar , you can see the monsters on the screen but they will charge at you when they spot you no matter how strong you are.
All console RPG games should be like that. It can be a bit tedious with the random encounters. It helps to build up your characters and it gets real repetitive.

I've played Grandia 2 and even though doesn't have random encounters I still think that the Final Fantasy games are better. After this I'll try Star Ocean - Till the end of time.
