The old PS1 game "Guardian's crusade" has no random encounters , you can actually see the monsters roaming on the screen. If they spot you , they will chase you so you have to sneak around them at first but if you are very strong , they will run away from you instead when they spot you. The Lunar series is similiar , you can see the monsters on the screen but they will charge at you when they spot you no matter how strong you are.
All console RPG games should be like that. It can be a bit tedious with the random encounters. It helps to build up your characters and it gets real repetitive.
