Default on the nature of cheese...

I finally caved in and bought the super-good cheddar from Trader Joe's. the kind that's aged for >4 years. $6 per pound, but it's so worth it...


Upside: great flavor, melts well
Downside: Too dry to slice easily or grate with large grater

anyway, that is all.

I eat cheese every single day. I have found this dutch cheese at Costco called Jarlsberg, I put it in a bagette, slicing it very thin, and grill it on the grill. It becomes all melty like very long threads, and then yummmmmmmmmmmm Can't beat that Trep

Where I come from, they have a market where they symbolically weigh and sell whole piles of cheese on the Waagsquare as a tourist attraction. I've accidentally witnessed this joyous event once, and it was very silly indeed.

Oh and I used to be really allergic to cheese. I'm not sure if I still am, but I have developed something of a distaste for the stuff over the years, so I haven't bothered to check.

You can get Jarlsberg in most supermarket deli counters.

Good cheddar, really good cheddar is good any way but cold from the fridge. Love good cheddar - Mmmmmmm, the stronger the better.

At the Whole Foods in downtown Chicago near where my sister works (at The American Bar Association), they're always giving out free sample of cheese. If I'm there with her I always go for that Stilton. Aw man, that shit's good! Like bleu cheese on acid.

I love cheese that bites back. Like a feisty, fierce lover.

Stilton is good, and I like that layered thing I see sometimes of Stilton and Gloucester - like a layer cake. Roquefort, though is the best of the blue cheeses. Blue brie is good too, though.

I love cheese! Whenever I pass through the Amsterdam airport for connecting flights, I always hang out by the free cheese samples.

My favorite though is bleu cheese. I also really like this kind that you can get in the Middle East called haloumi cheese. When you barbeque it, it doesn't melt, and it tastes great.

Swiss Gruyere is lovely as well. It's subtle but still bits back. I love my cheese sexy.
