Thank you all again. You know that I cannot find a restaurant within 150 miles that serve okonomiyaki. I was almost positive there would be one in Austin or Dallas but noooo. the closest I found was in Houston and it was considered mediocre at best.

Well, you can think of okonomiyaki as a "Japanese pizza omelet". The batter is egg-based and usually flavoured with dashi (bonito fish stock). Okonomiyaki translates loosely as "grilled as you like it", which means you can mix almost anything you want into the batter, usually sliced meat, seafood, noodles and vegetables, sometimes all of them! Thus, it can be as healthy or as fattening as you want! It's grilled until it's golden brown, then it's topped with a special sweet and savoury brown sauce and/or mayonnaise. Yum!
