How do you know what they're capable of displaying in terms of 480P, 720P 1080i.

Simple; those terms stand for a resolution, for instance 1018i stands for 1080 vertical lines, while the "i" stands for interlaced (and the "p" for progressive scan, which is "better"). So 1080 indicates a 1920x1080 resolution (on a 16 : 9 a.r.), and "p" would mean progressive scan (non-interlaced) so that's noticeably better than "i" (depends on the quality of the monitor ofcourse, on some the difference won't be noticeable at all). If you're talking about the native resolution of a TFT, then you'd have to check whether or not that monitor is capable of displaying the indicated ("720P"=1280x720, progressive) resolution. Very few TFTs actually have a native resolution according to 1080p spec, but otherwise do a fairly good job of displaying such content nonetheless (what do you need this for? HDTV/Xbox360/etc.?).

Wow! Great description! It really helped. I asked just because i'm curious. I already have an HDTV, but I was just wondering in case I ever wanna hook my 360 up to my monitor.

So if my specs say "Maximum Resolution 1280 x 1024 64Hz," it can do it?

Yep that means it can do 720p64 You might want to check your monitor OSD settings to see what kinds of interpolation it offers; it should have around three modes; no interpolation (which stretches 1280x720 to 1280x1024, might look a bit odd) and two other modes, one of which adds black bars on the bottom and top of the screen (the sharpest setting; no stretching and correct aspect ratio) and probably a setting similar to Sony's "Smart Zoom" (for TVs, if you happen to know those ones) which does stretch the image a bit, and adds bars (though smaller than with 'no interpolation'), but generally (probably) offers the best quality/size for 720p on your monitor.
