Well, someone will probably come along and present you with at least a half dozen of the most popular threads that already addressed this one, but what the heck, I'll bite. My all-time fave AGs are, in no particular order:

The Longest Journey
Myst
Riven
The Journeyman Project II
Shivers
Still Life
Dreamfall
Black Dahlia
The Last Express
Broken Sword II

There, I kept it to ten. Probably more than you wanted, but I think it's a nice cross section.

First always, though the others shift with my mood: Grim Fandango

Sins of the Fathers
Broken Sword II - the Director's Cut edging out the original for me
Dracula Resurrection/The Last Sanctuary - essentially one game
Dracula Origin
Black Mirror II
Syberia I and II
Sanitarium
Last Half of Darkness: Tomb of Zojir

The ones that have me most interested right now are Black Mirror III and Realms of the Haunting. Maybe I'll have a couple of more to add once I've played them.

It's just too hard... I love them all for all different reasons.
The ones already suggest are a good start.
I do love the Myst series of games....
Monkey island series of course. (minus 4)
Broken sword for sure.....
Big fan of machinarium
Gabriel knight, Blackmirror.... oh god there's just too many
ahhh love'm all

I have just 3 all-time favorite games and they will never change because they all mean something very special and personal to me.

Indiana Jones and the Fate of Atlantis
King's Quest 4: The Perils of Rosella
Syberia 1 and 2 -- played one after the other so count as one long game!

However, lately I have been thinking of maybe adding Lost Horizon to the list.

Grim Fandango - possibly the first game I completed without referring to a hint guide* at any point, simply because of how amazing it was.

*I started playing AGs from a young age, and blitzed my way through several of what are widely regarded as 'the classics' using hints quite liberally. It seemed like an amazing new genre with plenty of AAA titles to keep me satisfied... If I could clout my younger self for robbing future me of the satisfaction of solving those games by myself, I would.
