Never having seen any of the three movies (which isn't true, because I saw them all in my early childhood), I say Waterworld.

Upon watching Road Warrior again, I still say Thunderdome is better. The production values are higher and Max is a better character. Road Warrior is still a great movie on its own, but Thunderdome owns it. Whured.

The trick is...now you must watch Thunderdome again. That movie blows. The realization will strike you like the broom handle of a mad drunk janitor.

I watched parts of Mad Max 3 last night, because one the tv channels was airing it.

God damn that was an awful movie with all that Lost Boys stuff and Tina Turner...

Ok...ok fine! But you have to admit, thunderdome has a more apocalyptic feel to it. Road Warrior...not so much.

If you're a big Mad Max/Roadwarrior fan you might enjoy playing NCsoft's Auto Assault.

Its a bit more advanced though, less emphasis on cobbling together the technological remnants of a now unattainable level of civilisation.
