I'm not convinced it's easier to derail an IRC chat than one on the forums. Look at Lena's climate change thread, or even this one. It's just as easy to say "so, as I was saying..." and ignore the distractions on a live chat as it is on a forum, surely? Certainly all my experience of live chat has shown me that it's perfectly possible to maintain an amusing and interesting conversation without too much difficulty. Perhaps not an especially deep one, but then realtime chat isn't really the medium...

Anyone else interested in a scheduled chat, or (and this is important!) definitely not? I would be willing to give Trep's idea a try to see how it goes. Who else?!
