We're talking purely about artistic quality. NOT technical artistry.
OK, I concede that, in the context of this thread "best graphics" has relatively little to do with technical aspects and really means most atmospheric / memorable / creative etc, and The Dig was all of these. Because of this, it's one of my favourite games, despite some cheesy dialogue and characters that were difficult to sympathise with.

As for the "higher resolutions" thing, I played The Dig when it first came out and remember it feeling a bit chunky. When I say it was technically poor, I'm comparing it to what was available at the time, not trying to hold it up to today's standards.

The Curse Of Monkey Island has the best 2d graphics...., I totally agree. No other "engine" has evere come close to the feeling of MI3.

I think that there are many other "cartoon" adventures which have the graphical quality of MI3, if not surpasses it: Toonstruck, Discworld 2 (mentioned already), UFOs, or "Mortadelo y FilemĂłn: una aventura de cine" *

I would've loved to see another adventure game with this kind of artwork. Bill Tiller is a genius! Buy hey, so are Steve Purcell and Peter Chan. LucasArts always had the best art directors and artists.
