Callahan's Crosstime Saloon seems to be remembered fondly but I don't think it ever gets proper credit as a legitimate classic, which it absolutely is.
Police Quest: Open Season as well is a game which seems to get written off often but really is quite fantastic, especially if you love dark, hard-boiled mysteries.
