If you really want to learn about chocolate, search out a specialized shop and ask for help. I once was at a chocolate tasting arranged by such a store, and I can wholeheartedly recommend it. There is much more to fine chocolates than just the percentage, you know. I still don't eat much chocolate, or remember much about the different qualities, but it was really fascinating to hear about the world of cacao. And great to taste it!
