I base my top 10 on these factors:
1. Most importantly - has to have a great story. It must be consistant and balanced - not too long (which is the case with some AGs).
2. Have a perfect balance in character - this includes voice acting.
3. Correct atmosphere - graphics and sound
4. Well intergrated controls
Unless the puzzles are really obtuse I don't base an AG on its puzzles, as a good one will have puzzles well implimented into it.
I guess it's worth mentioning I've not played any Tex Murphey game, not played the first two MI games or Gabriel Knight 2 (I've played 3).
Just so people don't questions why for some reason they're not on my list.
Top 10:
1. Broken Sword - Shadow of the Templers
2. Grim Fandango
3. Silent Hill 2 (SH3 is my fav, but SH2 is best for story).
4. Discworld Noir
5. Myst: Revelations
6. Still Life
7. Full Throttle
8. Gabriel Knight: Sins of the Fathers
9. Curse of Monkey Island
10. Blazing Dragons
