The demo was done with a version of the Lassie engine that exports games into stand-alone applications. That version can't make games that have a full screen option.
However, the final game will be made with "LassieAS." This version of the engine makes games that open in Flash Player, which can play in full screen.
So, you'll be able to play the final game full screen, just not the demo.
