Well, I don't know what YOUR mustard looks like, but the mustard colour is defined as be a "yellow" or "yellow-brown" colour (it varies), even though "mustard greens" (though this is referring to the leaves, which can be eaten. Did you know that mustard is related to Cauliflower and Cabbage?) exist. I only know of white mustard, brown mustard, black mustard and Colonel Mustard (in the library with a wrench!)

If you meant to say Green Pepper, then I want to telly you that the green pepper, which we have at home, is more of an olive colour. And since a dark olive colour is black, the colour must be black. Isn't that wonderful logic?
