The Jedi Knight series. I would have chosen Knights of the Old Republic (amazing), but it's only one game (part 2 is too bug-ridden for me to consider), and the Jedi Knight series is many. Jedi Knight did a good job of making you feel like you were a Jedi, until your younger sister beat you on the head, telling you that you were late for class.

Seriously, though, the more I think about it the more I'm not sure that I particularly like any of these series. The Dark Forces series was good, but Jedi Knight II ruined it with some of the most confusing level design I've ever seen. KOTOR II failed to be as good as the original. The X-Wing games are probably very good examples of space combat, but it's a genre that I never really got into (though I keep meaning to buy some of these). Lego Star Wars is fun, but alternates between the extremely simple (the on-foot missions) and annoying (the vehicle-based ones).

I'm evidently hard to please.

Well, they're individual titles, and so hardly qualify as franchises. I haven't played Empire at War, though I'm not generally a huge RTS fan (it's apparently a good example of the genre, though).

Republic Commando is fun, but it feels way too linear and never really manages anything beyond being a fairly mediocre FPS dressed up as Star Wars. It's alright to play, but it was a missed opportunity.

You guys are ridiculous. KotOR 2 wasn't all that bad at all. Unfinished, perhaps. But a) I didn't find it buggy at all (I don't remember if it had patches or not), b) it had some interesting party mechanics that made the party more than just arms-for-hire, c) it's story (forgiving the unfinished parts) is actually a little more interesting and the dark v light dynamic a little more deep.

Any simple internet search will tell you how lucky you were. The bugs were quite noticable for large portion of the people who played Kotor2, and some people could not complete the game without resorting to hacking. I'm certainly glad to hear that you weren't plagued by such bugs.

By the way, does anyone know if Jade Empire is still going to be ported to PC? I seem to remember that there was talk about it during spring?
