I am glad that in Seattle I can get wild, troll-caught King salmon (no need for copper river) at a decent price at this time of the year and so I have it often, baked with olive oil, butter, with some herb de provence and some raw veggies for a nice and easy summer dinner.

I just had some dark chocolate and a cup of green tea to sooth a certain anxiety of having to start work tomorrow after an almost nine week long summer vacation.

My Mom, Dad, Grandmother, and I all ate lunch together, around 1p.m. today.
We ate a Salad of Cucumbers, tomatos, and Avocado's together. Followed by Crackers, and Bleu Cheese, Salmon, and Salami. They had Iced Coffee, and I had a Diet Pepsi with Lime (Which is my all-time favorite Diet Soda.) It was a great lunch, and we finished about 1:30. |

I just had the most wonderful ground lamb burgers with oven roasted potatoes and chanterelle sauce. To go with it a chilled white wine. *sighs dreamy*
Mr J is such a great chef, although not professional.

Monday my stepdad cooked a huge dinner of home-made cabbage rolls (ground beef, Italian sausage, rice, and secret spices he refuses to divulge wrapped in cabbage leaves and cooked in a tomato-based sauce), pinto beans, macaroni & cheese, and cornbread. Yum!
All the leftovers got sent home with me Monday night, so of course the leftovers were all gone by Wednesday night.

This thread needs a resurrection!
Today we had an Easter dinner smorgasboard (yep, it works each and every holiday): Smoked salmon, eggs with caviar, herring, meatballs made from ground lamb, shrimp and avocado salad, chicken, potato salad and olives. And now I'm sipping a glass of red wine. Life is good!
