Doing your best work when sleep-deprived is actually not that strange. I find that tiredness tends to cut down the more rigid, logical parts of the mind (that you need to work, get around, keep yourself fed etc) so it seems reasonable that the more creative side can be unleashed that way. I know I achieved some stunning breakthroughs in AG puzzles late at night (when my brain just wandered into the right connections coming up with creative solutions) Maybe I should try it for the poetry.

Can anyone explain why sushi tastes so much better at an actual sushi bar than the sushi you can buy at grocery stores? I see them make it fresh daily at the grocery stores, but something about it just isn't appetizing.

there is something about sushi that just isn't appetizing to me, I'm sure it is very good if you like that sort of thing but me for it looks more like bait.
It probably taste better at the bar b/c of the atmosphere, that just my guess

Do those places have their own fish tanks? Having the freshest fish would help I would imagine. I went to a restaurant in China town a couple years ago and they had multiple tanks with different fish and shellfish for dinner (that was cooked fish of course).

Yes, cooked fish is all those tanks are used for.
Sushi using raw fish is simply as fresh as can be, from whatever source (always sea fish). In the west, we use the phrase 'sashimi grade' to mean fish that is as fresh as can be. I've heard from some that this means flash frozen at sea (not deep frozen or brined) so that it withstands a few days shipping without degradation of 'fresh' (in other words, not acquiring parasites that would be bad for the gullet when eaten raw). Also note that even fish that you buy at the market labeled as fresh (not frozen) may actually have been flash frozen The term 'sashimi' means something much broader traditionally.

Speck, what are some sushi bars you like in the area?
I went to Kisaku recently, and I thought it was quite good. I did only have the salmon sushi, so I can't comment on the others. The only other place I've been to here I don't remember the name of or where it is. I've thought about going to Blue C Sushi at U Village, but passing by it one time I think I saw teenagers making the food, so I'm kind of hesitant. |
