Knowing I found a concerto
and wanted to play it,

Recipe time!

This recipe isn't particularly special, it's simply a normal wheat dough. It's the way the buns are formed that makes a Gotlandsbulle. They're very tasty, though, and I can recommend eating one while it's still warm, together with a glass of cold milk.

Gotlandsbullar
Gotlandic buns

1/2 l milk
150 g butter (only real butter for best results)
50 g yeast
1/2 teaspoon salt
1 1/2 dl sugar
about 1 1/2 l flour
2 teaspoons cardamom

Make the dough. (You know how it's done. Milk+melted butter 37 degrees Celsius, mix with yeast. Add the rest.) Let it rest 40 minutes.

Roll 40 buns according to the attached picture (this is the tricky part). Let them rest on the plate until they're ready (about 30 min).

Bake them in the oven. 250 degrees Celsius, 6-7 minutes. "Paint" them with hot water.

For special occasions (birthdays, funerals, weddings…) add saffron to the dough.

(I took the picture of some buns that were in the freezer - that's why there's some ice on them.)

I found a concerto and wanted to play it,
