Basically, my mp3 player's totally messed up, so I'm thinking I might filch myself an iPod (classic with huge capacity cause I'd imagine they're cheaper than one's with all the pointless stuff I already have on a laptop and phone).
But there's one little thing that bugs me -- do I have to install iTunes? Because I'd really rather not, especially when I've already got my music library pretty well organised in folders without having to unnecessarily waste space on my computer.

You can use the iPod as a USB drive. For that you have to reformat it and for that you have to use iTunes. But iTunes doesn't mess up your music library. It can 'make its own library' if you wish, but you can also use the library you already painstakingly made yourself. And if you choose to let iTunes handle its own library you can define the place where it is located, and iTunes makes neat directories with human-readable names. It's not the horrible iPhoto
