I have the same doubt, but if you force me to choose, I'll probably say Gabriel Knight: The Beast Within: I love the inner conflict of Gabriel and Ludwig; Von Glower and his subtle, fascinating and perilous charm; Grace's digging through the past of Bavaria; the Opera scene; the melancholic, suffering ending...
... But if you don't force me at gun point, I have to say all three games of Gabriel Knight series.
