It's not about being lazy. It's about being practical. It's no fun to have to choose between really hot water or really cold water. Sure, you could tap up a mixture of them both, but that requires filling up the sink, wasting a lot of water in the process.
(Worse is to have to choose between hot water or smelly water, but that's another story.)
